Today marks a truly special milestone for us – Taste and Tell is proudly celebrating its 11th anniversary! While the actual big day might have been yesterday, life often moves at its own whimsical pace, and arriving fashionably late to one’s own party is perfectly acceptable, especially when the celebration involves delicious cupcakes. What truly matters is being here, reflecting on an incredible journey filled with culinary adventures, shared moments, and a growing community.

It’s hard to believe that an entire decade plus one year has passed since Taste and Tell first came to life. In the fast-paced world of online content creation, 11 years feels like an eternity, practically making us blogging grandmas! The digital landscape has transformed dramatically since those early days. When I first embarked on this culinary blogging journey, it was purely driven by an unadulterated passion for food – its creation, its flavors, and the joy it brings. There were no brand sponsorships to consider, social media was still in its infancy for bloggers, and earning a modest $20 a month from Google ads was considered a significant achievement. Today, I am incredibly blessed and profoundly grateful to call this my full-time profession. Yet, at the very heart of it all, the initial spark that ignited this adventure remains as vibrant as ever: my deep and abiding love for food. There’s an inexplicable magic in the process of creating a dish, cooking with fresh ingredients, and then sharing those creations with others. It’s a joy that consistently fuels my passion, and I am eternally thankful for this platform that allows me to pursue what I love, day in and day out.

Over these eleven remarkable years, the learning curve has been steep and immensely rewarding. My cooking skills have evolved dramatically, transforming from enthusiastic amateur to a more confident and skilled home cook. These Circus Animal Cookie Cupcakes have vanilla cupcakes filled with a circus animal cookie infused cheesecake center, then topped with vanilla buttercream. Top it all off with a circus animal cookie for a fun, playful and delicious cupcake!

Ingredients

Cupcakes:

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 cup butter softened
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 cups buttermilk

Filling:

  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese at room temperature
  • 3 oz frosted circus animal cookies crushed (about 23 cookies)

Frosting:

  • 1 cup butter
  • 5 cups powdered sugar
  • Pinch of salt
  • 3-4 tablespoons heavy whipping cream
  • 36 frosted circus animal cookies

Instructions

  • To make the cupcakes: Preheat the oven to 350ºF. Line 36 muffin tins with cupcake liners.
  • In a medium bowl, combine the flour, baking powder, and salt.
    3 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon salt
  • In a large bowl, cream the sugar and butter together on medium speed until light and fluffy. Add in the eggs, one at a time, scraping down the bowl and beating well after each addition. Beat in the vanilla extract.
    2 cups sugar, 1 cup butter, 4 eggs, 1 teaspoon vanilla extract
  • Gradually add 1/3 of the dry flour mixture to the wet ingredients and beat to combine. Then, add 1/2 of the buttermilk and beat. Follow with another 1/3 of the flour mixture, then the remaining buttermilk, and finally the remaining flour mixture. Beat just until everything is combined, being careful not to overmix.
    2 cups buttermilk
  • Divide the batter evenly among the 36 prepared cupcake liners, filling each approximately 2/3 full.
  • Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow them to cool in the muffin tins for 5 minutes before transferring them to a wire rack to cool completely.
  • To make the filling: In a medium bowl or the bowl of a stand mixer fitted with a whisk attachment, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat on high speed until stiff peaks form. Add the softened cream cheese and continue to beat until the mixture is completely smooth and well combined. Gently fold in the crushed frosted circus animal cookies.
    1/2 cup heavy whipping cream, 1/4 cup powdered sugar, 1 teaspoon vanilla extract, 4 oz cream cheese, 3 oz frosted circus animal cookies
  • To make the buttercream: In the bowl of a stand mixer fitted with a paddle attachment, or using a hand mixer in a medium bowl, beat the softened butter on medium speed until light and creamy. Gradually add the powdered sugar, about 1/2 cup at a time, beating thoroughly after each addition until smooth. Once all the powdered sugar is incorporated, mix in a pinch of salt. Slowly add the heavy whipping cream, 1 tablespoon at a time, beating until you achieve your desired frosting consistency. For a classic look, add 1-2 drops of red food coloring to tint the buttercream a lovely pink hue, if desired.
    1 cup butter, 5 cups powdered sugar, Pinch of salt, 3-4 tablespoons heavy whipping cream
  • To assemble: Once the cupcakes are completely cooled, use a small, sharp knife or a cupcake corer to carefully cut a cone-shaped hole from the center of each cupcake, reserving the cut piece of cake. Fill the hollow center with approximately 1 teaspoon of the prepared cookie cheesecake filling. Gently replace the reserved cake piece back on top of the filling, pressing down lightly. Repeat this process for all remaining cupcakes.
  • Using a piping bag fitted with your favorite nozzle, pipe the prepared vanilla buttercream frosting generously onto each cupcake. For the final whimsical touch, place one frosted circus animal cookie on top of each frosted cupcake. Add a sprinkle of additional colorful sprinkles if desired, to enhance the festive look.
