This Feta, Pesto, and Tomato Bruschetta is an incredibly flavorful and versatile appetizer that’s perfect for any time of year. Featuring a creamy whipped feta base, aromatic pesto, and juicy diced tomatoes, it’s a crowd-pleasing starter ideal for holiday parties or casual gatherings.

Ingredients

For the Whipped Feta:

  • 4 oz feta cheese (preferably in a block for best texture, avoid pre-crumbled)
  • 1 1/2 oz whipped cream cheese
  • 1 small clove garlic minced (or a pinch of garlic powder)
  • salt and pepper (to taste)

For the Bruschetta Assembly:

  • 1 baguette (sliced into 28-30 pieces)
  • extra virgin olive oil (for drizzling)
  • 5 tablespoons prepared pesto (store-bought or homemade)
  • 1 14.5 oz can Hunt’s Diced Tomatoes well-drained
  • balsamic glaze (store-bought or homemade, for drizzling)

Instructions

  • Preheat your oven to 450ºF (230ºC).
  • To prepare the whipped feta: Crumble the block of feta cheese into a food processor. Pulse a few times until it’s broken down. Add the whipped cream cheese and minced garlic. Process for several minutes, scraping down the sides as needed, until the mixture is completely creamy and smooth. Season carefully to taste with salt and freshly ground black pepper, remembering feta is already quite salty.
  • Slice the baguette into approximately 28-30 even pieces. Arrange them in a single layer on a baking sheet. Drizzle lightly with extra virgin olive oil. Place the baking sheet in the preheated oven and toast until the bread is lightly golden and crisp, typically 4-5 minutes. Keep a close eye to prevent burning. Remove from the oven and let cool slightly.
  • Assemble the bruschetta: On each toasted baguette slice, spread a generous amount of the prepared whipped feta. Then, spread about 1/2 teaspoon of pesto evenly over the feta layer. Finally, top each piece with a small spoonful of the well-drained diced tomatoes.
  • Just before serving, artfully drizzle balsamic glaze over the top of the bruschetta pieces. Serve immediately for the best texture and flavor.
