Ingredients for Buffalo Chicken Pasta.

Essential Ingredients for Your One-Pot Buffalo Chicken Pasta

Creating this sensational dish requires a thoughtful selection of ingredients, each playing a crucial role in developing its rich flavor and creamy texture. Here’s a detailed look at what you’ll need and why:

  • Butter: We start with unsalted butter to build a flavorful base, allowing you to control the overall saltiness of the dish. While olive oil can be substituted, butter provides a richer, more nuanced flavor that complements the other ingredients beautifully.
  • Onion: Approximately 1/2 cup of finely diced onion is all it takes to add a subtle sweetness and aromatic depth. Dicing it small ensures it practically melts into the sauce, distributing its flavor evenly without overpowering the buffalo kick. Feel free to adjust the quantity to your personal preference.
  • Garlic: Freshly minced garlic is non-negotiable for its pungent, savory notes that are essential in any great pasta dish. It elevates the overall aroma and taste profile.
  • Pasta: Penne pasta is my top choice for this recipe. Its tubular shape and ridged surface are perfect for holding onto the creamy, cheesy buffalo sauce. However, any short-cut pasta like rotini, ziti, or cavatappi can work. Just be aware that different pasta shapes might absorb liquid at varying rates, potentially requiring slight adjustments to the cooking time or broth quantity.
  • Chicken Broth: This is where the pasta cooks, infusing every strand with savory chicken flavor. Opt for a low-sodium chicken broth to prevent the final dish from becoming overly salty, especially since buffalo sauce and cheese contribute their own sodium.
  • Buffalo Sauce: The star of the show! I typically use a regular buffalo sauce for its classic tangy and spicy profile. If you prefer a milder heat, a dedicated wing sauce can be a great alternative, often having a slightly sweeter and less intense spice level.
  • Cream Cheese: This is the secret to achieving that luxurious, velvety texture. Cream cheese melts into the sauce, creating an incredibly creamy and smooth consistency that perfectly coats the pasta and chicken. Ensure it’s softened and cut into cubes for easier melting.
  • Chicken: For ultimate convenience, I highly recommend keeping cooked, shredded chicken on hand (it freezes beautifully!). This shortcut drastically cuts down on prep time. Alternatively, a rotisserie chicken from your local grocery store is an excellent time-saving option.
  • Cheese: A harmonious blend of shredded mozzarella, cheddar, and crumbled blue cheese creates a complex flavor profile and irresistible gooeyness. Mozzarella offers stretch, cheddar provides sharp depth, and blue cheese adds a distinctive, pungent tang that pairs exquisitely with buffalo sauce. If blue cheese isn’t to your liking, feel free to omit it or substitute with more mozzarella or cheddar.

Mastering the One-Pot Method: Step-by-Step Instructions

Follow these simple steps to create a show-stopping Buffalo Chicken Pasta with minimal effort and maximum flavor:

STEP 1: Sauté Aromatics. Begin by melting the butter in a large pot or a spacious Dutch oven over medium heat. Once shimmering, add your finely diced onion and cook, stirring occasionally, until it has softened and become translucent, typically about 3-5 minutes. Towards the very end of this step, stir in the minced garlic and cook for just about 30 seconds more, until it becomes fragrant. Be careful not to let the garlic brown, as it can turn bitter.

STEP 2: Cook the Pasta. Add the dry penne pasta and the chicken broth to the pot with the aromatics. Give everything a good stir to ensure the pasta is submerged. Increase the heat to bring the liquid to a rolling boil. Once boiling, immediately reduce the heat to a gentle simmer, cover the pot tightly with a lid, and let it cook for 8 minutes. After this initial cooking time, remove the lid and continue to cook for an additional 5 minutes, or until the pasta is just shy of al dente. There should still be some liquid remaining in the pot, and the pasta should have a slight bite to it, not be completely soft.

STEP 3: Create the Creamy Buffalo Sauce. At this stage, your pasta should be perfectly cooked to just under al dente, and most of the chicken broth will have been absorbed, leaving a flavorful, slightly reduced liquid. Reduce the heat to its lowest setting. Add the buffalo sauce and the softened cream cheese cubes to the pot. Stir continuously and gently until the cream cheese completely melts and combines with the liquid, creating a smooth, creamy sauce. This ensures no lumps and a consistently rich texture.

STEP 4: Incorporate Chicken and Cheese. Once the cream cheese has fully melted into the sauce, add the cooked, shredded chicken to the pot. Stir everything together until the chicken is thoroughly coated and heated through, which should only take a couple of minutes over low heat. Then, remove the pot from the heat completely. Add the shredded mozzarella, cheddar, and crumbled blue cheese. Stir vigorously until all the cheeses have melted into a luscious, gooey sauce, perfectly clinging to the pasta and chicken.

Expert Tips for the Perfect Buffalo Chicken Pasta

Achieving a restaurant-quality Buffalo Chicken Pasta at home is easy with a few key insights:

  • Pasta Doneness is Key: The most crucial tip is to cook your pasta to just shy of al dente. Remember, it will continue to absorb liquid and cook further as it sits in the hot sauce. If you overcook it initially, you’ll end up with mushy pasta. The goal is a firm but not hard bite before you add the creamy elements.
  • Adjusting Spice Levels: If you’re a true heat seeker, feel free to increase the buffalo sauce to 3/4 cup, or even a full cup if you dare! For an extra kick, a pinch of cayenne pepper can be added with the buffalo sauce. For those who prefer less heat, stick to 1/2 cup and consider using a milder wing sauce or reducing the blue cheese.
  • Cheese Choice Matters: While a mild cheddar will melt easily, a medium or sharp cheddar offers a more robust flavor that stands up well to the spicy buffalo sauce. Freshly shredded cheese also melts significantly better and more smoothly than pre-shredded varieties, which often contain anti-caking agents.
  • Cream Cheese Prep: Ensure your cream cheese is at room temperature and cut into smaller cubes before adding it to the pot. This helps it melt quickly and evenly, preventing lumps in your silky sauce.
  • Optional Garnishes: Elevate your dish with fresh garnishes! A sprinkle of chopped fresh chives or green onions adds a bright, herbaceous note and a pop of color. A drizzle of ranch or blue cheese dressing offers a cool contrast, and extra blue cheese crumbles are always welcome for true enthusiasts. Crispy bacon bits can also add a delightful crunch and smoky flavor.
  • Preventing Sticking: Stir the pasta frequently, especially during the boiling and simmering stages, to prevent it from sticking to the bottom of the pot.

Storing and Reheating Leftovers

While this Buffalo Chicken Pasta is undoubtedly at its best when served fresh, especially right after the cheese has melted and the sauce is at its creamiest, leftovers can still be enjoyed! It’s important to note that pasta continues to absorb sauce over time, so the dish will thicken as it sits.

  • Refrigeration: Store any leftover Buffalo Chicken Pasta in an airtight container in the refrigerator for up to 3 days. This helps maintain its freshness and prevents it from drying out.
  • Reheating: When reheating leftovers, whether in the microwave or on the stovetop, you will likely need to add a splash or two of extra chicken broth or even a little milk/cream. Stir it in as you reheat to loosen the pasta and bring the sauce back to its original creamy consistency. Reheat gently over low heat on the stovetop, stirring often, or in 30-second intervals in the microwave until thoroughly warmed through.
  • Freezing: Freezing this dish is generally not recommended due to the pasta and dairy components. The texture of the pasta can become mushy, and the creamy sauce may separate upon thawing and reheating. It’s best enjoyed fresh or within a few days from the refrigerator.

Delicious Variations & Serving Suggestions

This Buffalo Chicken Pasta is wonderfully versatile! Here are some ideas to customize it to your taste:

  • Vegetable Boost: Stir in a handful of fresh spinach during the last few minutes of cooking for added greens. Sautéed bell peppers, corn, or diced celery can also be incorporated with the onions for extra nutrition and crunch.
  • Different Proteins: Instead of chicken, consider using cooked ground turkey or even chickpeas for a vegetarian version. If using chickpeas, drain and rinse them, then add them along with the buffalo sauce and cream cheese.
  • Cheese Alternatives: Experiment with other cheeses! A blend of Monterey Jack, Colby Jack, or even a smoked gouda could add an interesting twist. For a less pungent flavor than blue cheese, try a sprinkle of grated Parmesan.
  • Extra Creaminess: For an even richer sauce, a tablespoon or two of heavy cream can be stirred in along with the cream cheese.
  • Serving Sides: This hearty pasta can be a complete meal on its own, but it pairs wonderfully with a crisp green salad, a side of garlic bread or crusty artisan bread for soaking up every last drop of sauce, or some roasted vegetables.

An easy dinner for buffalo chicken lovers, this Buffalo Chicken Pasta is made simple in one pot. Pasta, chicken, and a spicy cheese sauce all come together in this 30 minute dinner.
Servings: 6

Ingredients

  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 16 oz penne pasta dry
  • 4 cups chicken broth
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese softened and cut into cubes
  • 2 cups cooked, shredded chicken
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup blue cheese crumbles

Instructions

  1. In a large pot or Dutch oven, melt the butter. Add the onion and cook until softened, then add the garlic and cook just until fragrant.
2 tablespoons butter, 1/2 cup diced onion, 2 cloves garlic
  2. Add the dry pasta and the chicken broth to the pot. Stir to combine, and bring to a boil. Reduce the heat to a simmer, then place a lid on the pot and cook for 8 minutes. Remove the lid from the pot and continue to cook until the pasta is just short of al dente, about another 5 minutes. You still want some liquid in the pot, and the pasta should not be all the way soft.
16 oz penne pasta, 4 cups chicken broth
  3. Reduce the heat to low and add the buffalo sauce and the cream cheese to the pot. Stir until the cream cheese is melted and combined. Stir in the chicken. Continue to cook over low, just until the chicken is heated through. Turn off the heat.
1/2 cup buffalo sauce, 8 oz cream cheese, 2 cups cooked, shredded chicken
  4. Add in the mozzarella, cheddar, and blue cheese to the hot pasta and stir until the cheese is melted.
1/2 cup mozzarella cheese, 1/2 cup cheddar cheese, 1/2 cup blue cheese crumbles
  5. Serve topped with more blue cheese, if desired.

Recipe Notes:

The pasta will continue to soak up the sauce, so this is best eaten right away. If it becomes too thick, add in some extra chicken broth when reheating.
If you like it spicier, add up to 3/4 cup of buffalo sauce.
