Icing
- 1 1/2 cups powdered sugar
- 3 tablespoons coconut milk
- 3/4 teaspoon coconut extract
- toasted coconut for topping
Instructions
- Preheat your oven to 325°F (160°C). Lightly spray a donut pan with non-stick cooking spray.
- In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, sugar, baking powder, and salt. In a separate bowl, combine the wet ingredients: coconut milk, lightly beaten eggs, coconut extract, melted butter, and vegetable oil. Gradually add the dry ingredients to the wet ingredients, mixing just until everything is combined and no dry streaks of flour remain. Be careful not to overmix.
