    old fashioned oats
  • 1/2
    cup
    all-purpose flour
  • 1/2

    packed light brown sugar
  • 1/2
    teaspoon
    salt
  • 1/4
    teaspoon
    ground allspice
  • 1/4
    teaspoon
    ground ginger
  • 6
    tablespoons
    cold unsalted butter,
    cut into small pieces

Strawberry Filling

  • 2
    pounds
    strawberries,
    hulled and halved or quartered (depending on the size)
  • 1/2
    cup
    packed light brown sugar
  • 1/4
    cup
    granulated sugar
  • 2
    teaspoons
    instant tapioca
  • 1
    tablespoon
    fresh lime juice
  • 1/2
    teaspoon
    ground cardamom

Instructions

  1. Roll the pie dough into a 12-inch round. Fit it gently into a 9-inch pie dish and crimp the edges decoratively. Place the prepared pie crust in the refrigerator to chill until it’s needed.
  2. In a medium bowl, combine the old-fashioned oats, all-purpose flour, packed light brown sugar, salt, ground allspice, and ground ginger. Using a fork, a pastry blender, or your fingertips, work the cold butter pieces into the dry mixture until it forms a coarse, crumbly texture. Refrigerate this crumble topping until you’re ready to use it.
  3. Adjust an oven rack to the lower third position in your oven. Place a baking sheet onto this rack and preheat the oven to 400ºF (200ºC). Preheating the baking sheet ensures a crisp bottom crust.
  4. In a large mixing bowl, gently combine the prepared strawberries with the packed light brown sugar, granulated sugar, instant tapioca, fresh lime juice, and ground cardamom. Stir carefully until the strawberries are evenly coated and the tapioca dissolves into the juices.
  5. Evenly spread the strawberry filling into the chilled pie crust. Generously top the fruit with the prepared crumble topping, ensuring it’s distributed over the entire surface.
