It doesn’t get much easier than this slow cooked Tex-Mex chicken! Serve over rice, or use as a taco or burrito filler.

Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 tablespoons taco seasoning
  • 1 1/2 cups salsa
  • 1 can 15 oz pinto beans, drained and rinsed
  • 1 green bell pepper cut into strips
  • 1 red bell pepper cut into strips
  • 1 cup frozen corn
  • Cooked rice for serving
  • 1 cup shredded cheddar cheese
  • Chopped cilantro

Instructions

  • Place the chicken breasts evenly at the bottom of your slow cooker. Sprinkle the taco seasoning generously over the chicken, ensuring each piece is well coated for maximum flavor. Pour the salsa over the seasoned chicken. Cover the slow cooker with its lid and cook on the low setting for 3 hours.
