Shredded chicken, mango and avocado are the stars in this easy California Club Chicken Wrap that is perfect for a weeknight.

Ingredients

  • 8 slices bacon
  • 2 cups shredded chicken
  • Salt and pepper to taste
  • 1 mango, finely chopped
  • 6 tablespoons mayonnaise, divided
  • 2 tablespoons fresh lime juice
  • 1 large avocado (or 2 small)
  • 4 (10-inch) whole wheat or spinach tortillas
  • 2 cups shredded romaine lettuce
  • 1 large tomato, diced

Instructions

  1. Place the bacon in a large skillet and cook over medium heat until crisp. Transfer the cooked bacon to a paper towel-lined plate to drain excess fat, then set aside.
  2. In a large mixing bowl, combine the cooked shredded chicken. Season generously with salt and pepper. Add the finely chopped mango, 3 tablespoons of mayonnaise, and the fresh lime juice. Stir until all ingredients are well combined.
  3. Carefully remove the pit and skin from the avocado. Place the avocado flesh in a separate bowl. Roughly mash it with a fork. Season the mashed avocado with salt and pepper to your liking, then stir in the remaining 3 tablespoons of mayonnaise until smooth and creamy.
  4. Lay a tortilla flat on a clean work surface. Spread one-quarter of the mashed avocado mixture evenly over the tortilla, leaving a 1-inch border around the edges.
  5. Down the center of the tortilla, layer one-quarter of the shredded romaine lettuce, followed by one-quarter of the diced tomato. Break two slices of the cooked bacon into pieces and arrange them over the vegetables. Finally, spoon one-quarter of the chicken-mango mixture over the bacon.
  6. To wrap, first fold in the two opposite sides of the tortilla (the left and right edges) towards the center. Then, starting from the bottom, tightly roll the tortilla upwards like a burrito, ensuring the fillings are secure.
  7. Repeat steps 4-6 with the remaining tortillas and ingredients until all four wraps are assembled.
  8. For easier eating and a beautiful presentation, cut each finished wrap in half diagonally just before serving. Enjoy immediately!
