Ingredients

    large red bell peppers
  • 1/3
    cup
    extra virgin olive oil
  • 1/3
    cup
    freshly grated Parmigiano-Reggiano cheese

    linguine

Instructions

  1. Place an oven rack about 6 inches below the broiler and preheat the broiler. Place the peppers on a broiler pan or baking sheet and broil, turning occasionally, until the skin is blackened and blistered, 12-15 minutes. Gradually add small amounts of the reserved starchy cooking water, stirring continuously, until a creamy, luscious sauce coats the linguine perfectly. The starch in the water helps bind the sauce to the pasta.
