- 1 8 oz package Reese’s Minis
Instructions
- Preheat oven to 325°F.
- Place the chocolate sandwich cookies in a food processor and process until they form fine crumbs. Add in the melted butter and salt and process to combine. Press the mixture firmly into the bottom and halfway up the sides of a 9-inch springform pan. Bake for 10-12 minutes, then set aside to cool completely. Once cool, wrap the outside of the springform pan tightly with several layers of heavy-duty aluminum foil to prepare for the water bath, ensuring no water can seep in.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until it is perfectly smooth and creamy, with no lumps. Add the eggs, one at a time, beating on low speed and scraping down the sides of the bowl thoroughly after each addition until just combined. Be careful not to overmix.
