Cakes
- 1/2 cup + 1 tablespoon unsalted butter, at room temperature
- 1 1/2 cups all-purpose flour, plus more for muffin tin*
- 2 teaspoons baking powder*
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- Zest and juice of 1 lemon
- 1 cup granulated sugar
- 2 large eggs
Glaze
- 1 1/2 cups powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
- Preheat the oven to 350ºF (175°C). Use the 1 tablespoon of butter to grease the insides of a 6-cup jumbo muffin tin. Flour the tin and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. In a small bowl or liquid measuring cup, mix together the buttermilk, vanilla, lemon zest, and lemon juice.
- In a large bowl or the bowl of a stand mixer, cream the remaining 1/2 cup butter and granulated sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition until fully incorporated.
- With the mixer on low speed, gradually add one-third of the flour mixture, followed by half of the buttermilk mixture. Continue by adding another one-third of the flour, then the remaining buttermilk mixture, and finally the remaining flour. Mix until just combined, being careful not to overmix.
- Divide the batter evenly between the 6 prepared muffin cups. Bake in the center of the oven for 20-25 minutes, or until a wooden skewer or toothpick inserted into the center of a cake comes out clean.
- Allow the cakes to cool in the muffin tin for 10 minutes before carefully removing them to a wire cooling rack to cool completely.
- Once the cakes are cool, prepare the glaze. Place the wire cooling rack over wax paper or parchment paper to catch any drips. In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth.
- Pour the glaze over the cooled cakes, ensuring each is thoroughly coated. Use a small knife or an offset spatula to spread the glaze evenly if needed. Let the cakes sit for at least 30 minutes, or until the glaze has set, before serving. For best flavor and texture, store in an airtight container and enjoy the next day!
