Ingredients

  • 4 slices bacon chopped
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 jalapeño seeds and membranes removed, minced
  • 1 1/2 lbs ground beef
  • 12 oz beef broth
  • 1 1/2 tablespoons chili powder
  • 1 tablespoon hot sauce such as Frank’s red hot
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 8 oz can tomato sauce
  • 1 15 oz can kidney beans, drained and rinsed
  • desired toppings – sour cream shredded cheddar cheese, jalapeños, etc.

Instructions

  • Cook the bacon in a large pot or Dutch oven over medium heat until crispy. Remove to a paper towel lined plate. Discard all but about 1 tablespoon of bacon grease.
  • Add the onion and cook until translucent. Add the garlic and the jalapeño and continue to cook for 1 minute. Add the ground beef and cook until browned and cooked through, breaking it up as it cooks.
  • Once the beef is cooked, add the beef broth. Cook until the liquid is reduced by about two-thirds. Stir in the chili powder, hot sauce, Worcestershire sauce, salt and pepper. Add the diced tomato and tomato sauce and bring to a bubble. Reduce the heat and continue to simmer until the chili thickens, about 30 minutes. Stir in the kidney beans and the reserved bacon and cook until the beans are warmed through, about 10 minutes.
