  • 2 cups packed brown sugar
  • 1 cup plus 2 tablespoons butter softened (divided)
  • 2 teaspoons vanilla extract divided
  • 2 eggs
  • 3 cups quick-cooking oats raw
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt divided
  • 1 14-oz can sweetened condensed milk
  • 1 12-oz package semi-sweet chocolate chips

Instructions

  • Prepare Your Baking Dish: Preheat your oven to 350°F (175°C). Line an 8x12x1 inch sheet pan or a 9×13-inch baking dish with parchment paper, allowing some overhang on the sides for easy removal. Alternatively, you can thoroughly spray the dish with nonstick cooking spray. Set the prepared dish aside.
  • Make the Oatmeal Cookie Dough: In a large mixing bowl, combine the packed brown sugar and 1 cup of the softened butter. Beat them together with an electric mixer until the mixture is light, fluffy, and well combined. Next, add in 1 teaspoon of the vanilla extract and both eggs, continuing to beat until everything is fully incorporated and smooth. In a separate, medium-sized bowl, whisk together the quick-cooking oats, all-purpose flour, baking soda, and 1/2 teaspoon of the salt.
