Fast, easy and full of flavor, this Spicy Pork Noodle Bowl recipe is delicious and addictive. Skip the takeout and make these vibrant bowls at home for a fresh, customizable meal!

Ingredients

  • 8 oz thin Chinese noodles*
  • 1/4 cup plus 2 teaspoons vegetable oil
  • 12 oz Country Pork Sausage** (or ground pork)
  • 1 tablespoon minced fresh ginger
  • 1/4 cup chicken broth
  • 1/2 cup chopped bread and butter pickles, plus 2 tablespoons brine from the jar
  • 1/4 cup plus 2 tablespoons low-sodium soy sauce
  • 1/4 cup toasted sesame seeds, plus more for serving
  • 1 tablespoon Asian chili-garlic sauce, plus more for serving (adjust to taste)
  • 2 teaspoons packed light brown sugar
  • 2 Persian cucumbers, cut in half lengthwise and then sliced
  • 1 cup grape tomatoes, chopped

Instructions

  1. Cook the noodles according to package directions. Once cooked and drained, toss them with 2 teaspoons of the vegetable oil to prevent sticking and keep them from clumping. Set aside.
  2. Meanwhile, heat 1 tablespoon of the remaining vegetable oil in a large skillet or wok over medium-high heat. Add the Country Pork Sausage (or ground pork) and 2 teaspoons of the minced fresh ginger. Brown the meat thoroughly, breaking it up with a spoon as it cooks, for about 3-5 minutes, until no pink remains.
  3. Once the pork is cooked through, add the chicken broth, chopped pickles, pickle brine, and 2 tablespoons of the low-sodium soy sauce to the skillet. Continue to cook, stirring frequently and scraping up any browned bits from the bottom of the pan, until the liquid has mostly evaporated. This step allows the pork to absorb incredible flavor from the sauce ingredients, typically taking approximately 4-5 minutes.
  4. While the pork is cooking, prepare the vibrant dressing. Place the 1/4 cup toasted sesame seeds into a blender or small food processor and pulse until they are finely ground, which usually takes about 15 seconds.
  5. Add the remaining 3 tablespoons of vegetable oil and 1/4 cup water to the ground sesame seeds. Puree until the mixture is smooth and creamy.
  6. Next, add the 1 tablespoon of Asian chili-garlic sauce (or more, to your preference for heat), the 2 teaspoons of packed light brown sugar, the remaining 1/4 cup of low-sodium soy sauce, and the remaining 1 teaspoon of fresh ginger to the blender. Puree again until all ingredients are thoroughly combined and the dressing is smooth and well-emulsified.
  7. To assemble your Spicy Pork Noodle Bowls, divide the cooked noodles evenly among four individual serving bowls. Drizzle a generous amount of the freshly prepared dressing over the noodles, ensuring they are well coated.
  8. Top each bowl with an ample serving of the flavorful ground pork mixture, followed by the crisp sliced Persian cucumbers and the sweet chopped grape tomatoes.

*For the thin Chinese noodles, I used a type readily available at my local grocery store, specifically labeled as Somyun, Soft & Thin Wheat Noodles. These provide a lovely, tender texture that soaks up the sauce beautifully. However, feel free to use any thin Asian noodle variety you prefer or can easily find, such as vermicelli, thin spaghetti, or even ramen noodles (just discard the seasoning packet).

**The original recipe suggests regular ground pork. While lean ground pork works perfectly well and provides a neutral base, I’ve found that using Country Pork Sausage adds an extra layer of seasoned flavor and richness that truly elevates the dish. The spices in the sausage complement the Asian flavors wonderfully. If your grocery store doesn’t typically carry plain ground pork, Country Pork Sausage is an excellent and often more flavorful alternative. Use whichever you have access to or prefer!
