Ingredients

  • 1 dozen large hard-boiled eggs, peeled
  • 6 tablespoons mayonnaise
  • 2-4 tablespoons pickled jalapeño peppers, minced
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon salt
  • Freshly ground pepper, to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and carefully remove the yolks to a bowl.
  2. To the yolks, add the mayonnaise, minced jalapeño peppers, yellow mustard, and ground cumin. Mash together thoroughly until mostly smooth. Season generously with salt and fresh ground pepper to taste.
  3. Spoon or pipe the egg yolk mixture back into the egg white halves.
