Cheesecake Filling
- 20 oz cream cheese softened
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon vanilla extract
- 1/4 cup heavy whipping cream
- 2 egg yolks
- 2 whole large eggs
- 2 full-size Snickers bars chopped
- 1/2 cup salted peanuts roughly chopped
Frosting
- 8 oz cream cheese softened
- 2 oz (4 tablespoons) unsalted butter, softened
- 1 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 2 tablespoons heavy whipping cream
- 1 1/2 full-size Snickers bars chopped, for topping
- 1/4 cup salted peanuts for topping
Instructions
- Preheat your oven to 375ºF (190°C).
- For the crust, place graham crackers into a food processor and pulse until finely ground into crumbs. Add the sugar and salt, then process again until well combined. Pour in the melted butter and pulse until the mixture resembles wet sand and holds together when pressed.
- Transfer the graham cracker crumbs to a 9-inch springform pan. Press the crumbs firmly and evenly onto the bottom and 1 1/2 inches up the sides of the pan. Transfer the cheesecake to the refrigerator to cool completely and set, preferably overnight, for best results.
- To prepare the chocolate cream cheese frosting, beat the softened cream cheese and butter in a stand mixer until the mixture is light and smooth. Gradually add the powdered sugar, cocoa powder, and vanilla extract, beating until the frosting is silky and smooth. Slowly beat in the heavy whipping cream until the frosting reaches a spreadable consistency.
