Ingredients

Cookies

  • 1 cup softened butter
  • 1 1/2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 1/4 cup sour cream
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 3 1/2 – 4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Frosting

  • 1/2 cup softened butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 – 2 cups powdered sugar
  • 1-2 tablespoons milk
  • food coloring (optional)

Instructions

  1. Preheat the oven to 350ºF (175ºC). Line a baking sheet with parchment paper or a silicone baking mat. (Alternatively, lightly grease the baking sheet.)
  2. In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter until it is smooth and creamy. Add the granulated sugar, vegetable oil, sour cream, egg yolks, and vanilla extract. Mix on medium speed until all ingredients are thoroughly combined and the mixture is light and fluffy.
  3. In a separate medium-sized bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt until completely combined and free of lumps. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Be careful not to overmix, as this can lead to tough cookies.
  4. Using a 3-tablespoon cookie scoop, portion the dough onto the prepared baking sheet, ensuring at least 2 inches of space between each cookie to allow for proper spreading.
