  • 2 pounds small red potatoes, halved
  • 1 cup buttermilk
  • Salt and pepper, to taste
  • ¼ cup fresh chives, chopped
  • ½ cup extra-sharp cheddar cheese, shredded

  1. Preheat the oven to 350ºF (175°C).
  2. Arrange the bacon on a wire rack set over a sheet pan and bake until crisp, about 12 to 15 minutes. Cool slightly and then chop.
