- 2 to 3 pounds butternut squash, seeded, peeled and cut into 3/4” cubes
- 1 tablespoon olive oil
- 1/4 teaspoon freshly grated nutmeg
- Salt and pepper, to taste
- 3 cups chicken stock
- 1 small onion, cut in half
- 1 fresh bay leaf
- 1 large clove garlic, smashed
- 4 tablespoons butter
- 12-16 fresh sage leaves
- 1 tablespoon extra virgin olive oil
- 1 pound sweet Italian sausage
- 1 pound penne pasta
- 1/2 cup creme fraiche
- Grated Parmigiano-Reggiano, for serving
Instructions
- Preheat the oven to 400ºF. In a large bowl, combine half of the squash with a drizzle of olive oil. Season with fresh nutmeg, salt, and pepper. Spread on a baking sheet and roast until the squash is tender, about 20 minutes.
- Meanwhile, combine the remaining squash, chicken stock, onion, bay leaf, garlic, and salt to taste in a medium saucepan. Bring the mixture to a simmer and cook until the squash is tender, about 15-20 minutes. Remove the onion and bay leaf. Puree the mixture with an immersion blender until smooth, or carefully transfer to a regular blender and process until creamy. The sauce should be loose and coat the back of a spoon.
- Bring a large pot of salted water to a boil, then add the penne pasta and cook according to package directions until al dente.
- Place a small skillet over medium heat and add the butter. Once the butter melts and the foam subsides, add half of the sage leaves and fry until crisp. Carefully remove them to a paper towel-lined plate to drain, and repeat with the remaining sage leaves. After frying all the sage, pour the infused butter into the butternut squash puree and stir to combine.
- Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil, then the sweet Italian sausage. Cook, breaking it up with a wooden spoon as it browns, until the sausage is fully cooked through.
- Before draining the pasta, reserve about a mugful (roughly 1 cup) of the starchy pasta water. Drain the cooked pasta and return it to the pot. Add the butternut squash puree and the cooked sausage. Stir well to combine. If the sauce seems too thick, gradually add some of the reserved pasta water until it reaches your desired consistency. Stir in the creme fraiche, then toss the pasta with the sauce for a minute or two, allowing the flavors to meld beautifully. Finally, fold in the roasted butternut squash cubes.
