Ingredients

  • 2 (8-10 oz each) boneless, skinless chicken breasts
  • Salt and pepper
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup all-purpose flour
  • 1 1/2 cups panko breadcrumbs
  • Vegetable or canola oil for frying
  • 15 oz tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 cup grated mozzarella cheese

Instructions

  2. On a cutting board, carefully butterfly the chicken breasts open, creating 4 thin cutlets. Season both sides generously with salt and pepper.

  6. Carefully place the breaded chicken into the hot oil. Cook, flipping once, until each side is golden brown and crispy, and the chicken is cooked through (about 7 minutes total). Remove cooked chicken to a plate.
  7. While the chicken is cooking, combine the 15 oz tomato sauce, 1 teaspoon basil, 1 teaspoon oregano, and 1 teaspoon parsley in a small pot. Cook over medium heat until heated through. Season with salt and pepper.
