The kids will love these fun Pizza Cups – an easy twist for pizza night! They are also great for lunch on the go or for after school snacks!

Ingredients

Cups:

  • 12 frozen dinner rolls, thawed to room temperature (such as Rhodes)

For the beef cups*:

  • 1 lb ground beef
  • 1 cup pizza sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup grated Mozzarella cheese

For the pepperoni cups*:

  • 6 oz. pepperoni slices, cut into fourths
  • 1 cup pizza sauce
  • 1 cup grated Mozzarella cheese

Instructions

  • Preheat the oven to 350ºF (175ºC). Spray a 12-cup muffin tin with nonstick cooking spray. Set aside.
  • Lightly spray a counter with nonstick cooking spray. Flatten each of the thawed rolls into a 5-inch circle. Cover with a piece of plastic wrap that has also been sprayed with nonstick cooking spray to prevent sticking.

If you are making the beef cups:

  • Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks. Once it is no longer pink, drain any excess fat. Stir in the pizza sauce, Italian seasoning, and salt and pepper to taste. Turn off the heat.

If you are making the pepperoni cups:

  • In a bowl, combine the pepperoni and pizza sauce, then stir until well mixed.
  • Remove the plastic wrap from the dough. Evenly press one piece of dough into the bottom and up the sides of each muffin cup, forming a bowl-like shape.
  • Sprinkle half of the cheese in the bottom of the dough cups.
  • Top with your chosen filling (beef or pepperoni), distributing it evenly among all the cups.
  • Top each cup with the remaining cheese.
  • Bake in the preheated oven until the dough cups are baked and lightly browned, and the cheese has melted and is bubbly, about 20 to 25 minutes.

Recipe Notes:

*Each of the filling recipes listed above is designed for 12 cups. If you wish to make both the beef and pepperoni versions simultaneously, you would need a total of 24 dinner rolls. The filling recipes can easily be halved to create 6 cups of each flavor if you prefer variety.
