These Shredded Pork Tacos have spiced pork that is slow cooked and shredded, then served with your favorite taco toppings. This is a minimal effort meal with maximum flavor!

Ingredients

  • 2 teaspoons salt
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 2 lb pork roast (I suggest a pork shoulder roast)
  • 2 medium onions
  • 1/4 cup water
  • 12 (6-inch) flour tortillas
  • Toppings – diced red onion, cilantro, sour cream, shredded cabbage, avocado, cotija, sliced limes, etc.

Instructions

  1. In a small bowl, combine the salt, oregano, and cumin.
  2. Cut the roast into a few large chunks. Sprinkle the seasoning mix evenly over the pork.
  3. Cut the onions in half, then slice into half moons. Place the onions in the bottom of a slow cooker.
  4. Add the pork to the slow cooker on top of the onions. Add the water to the slow cooker.
  5. Cover and cook on low until the pork is pull-apart tender, about 6-7 hours.
  6. Once tender, remove the pork from the slow cooker and shred. Return the pork to the slow cooker and mix in with the cooked onions.
  7. Warm the tortillas, or char in a dry skillet or over a gas stove. Add some of the pork to each tortilla, then top with your desired toppings.
