Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter cut into small pieces
  • 3/4 cup sour cream
  • 1/2 cup shredded sharp cheddar cheese
  • 1 tablespoon water
  • 1 tablespoon minced canned chipotle chile in adobo sauce
  • 1 large egg lightly beaten

Instructions

  • Preheat your oven to 350ºF (175ºC). Prepare a baking sheet by spraying it lightly with nonstick cooking spray.
  • In a medium-sized mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk these dry ingredients together until well combined.
  • Add the cold butter, cut into small pieces, to the flour mixture. Using a pastry blender or two knives, cut the butter into the flour until the mixture resembles coarse meal with pea-sized crumbs. This step is crucial for flaky scones.
  • In a separate small bowl, whisk together the sour cream, shredded sharp cheddar cheese, water, minced chipotle chile in adobo sauce, and the lightly beaten egg.
