Game day will never be the same after you try these Jalapeño Stuffed Taco Soft Pretzel Sticks. Creamy, spicy and addictive!

Ingredients

  • 2 cups warm water
  • 1/4 cup brown sugar
  • 4 1/2 teaspoons yeast
  • 5-6 cups flour
  • 3 tablespoons taco seasoning (for dough)
  • 2 teaspoons salt
  • 1 tablespoon vegetable oil
  • 8 oz cream cheese softened
  • 4 oz shredded cheddar cheese
  • 1 cup pickled jalapenos diced
  • 8 cups water (for boiling)
  • 2/3 cup baking soda
  • 1 egg
  • coarse salt (for topping)
  • 2 avocados (for guacamole)
  • 1/2 cup sour cream (for guacamole)
  • 3 tablespoons Taco Seasoning (for guacamole)
  • 2 tablespoons minced cilantro (for guacamole)
  • juice from one lime (for guacamole)
  • salt (to taste, for guacamole)

Instructions

  1. Place the warm water, 1 tablespoon of the brown sugar, and the yeast in the bowl of a stand mixer. Allow this mixture to sit for 2-5 minutes until the yeast softens and begins to bubble actively, indicating it’s alive and ready. Stir in the remaining brown sugar, 3 tablespoons of the taco seasoning, and one cup of the flour, mixing until just combined. Add in the 2 teaspoons of salt, then gradually add the remaining flour, 1/4 to 1/2 cup at a time, until you achieve a soft and slightly tacky dough. Knead the dough with the mixer’s dough hook until it is smooth and elastic, approximately 5 minutes.
  2. Lightly grease a large bowl with the vegetable oil. Transfer the kneaded dough to the bowl, turning it to coat all sides with the oil. Cover the bowl with a clean kitchen towel or plastic wrap. Allow the dough to rise in a warm place until it has doubled in size, which typically takes about 1 hour.
  3. While the dough is rising, prepare the delicious filling. In a medium bowl, combine the softened cream cheese and shredded cheddar cheese. Add in the diced pickled jalapeños and stir well until all ingredients are thoroughly combined and evenly distributed. Set aside.
  4. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. In a very large pot, bring 8 cups of water to a rolling boil. Carefully and slowly add the 2/3 cup of baking soda to the boiling water. Be cautious as it will fizz and bubble up significantly; add it gradually to prevent overflow. Maintain a gentle boil.
  5. Once the dough has risen, gently punch it down and divide it into 8 equal pieces. Take one piece of dough at a time and, on a lightly floured surface, roll it out into a long rectangle, roughly 18 inches long and 3 inches wide. Cut this rectangle into 4 equal, smaller pieces (each about 4.5 inches long).
  6. Place about 2 teaspoons of the prepared cheesy jalapeño filling down the center of each small dough piece. Carefully fold one side of the dough over the filling to meet the other side, then firmly pinch the edges together to seal the seam completely. Also, pinch the ends of each stick to prevent the filling from escaping.
  7. Gently transfer a few pretzel sticks at a time into the simmering baking soda water. Allow them to boil for 30-60 seconds (no longer than 1 minute). Using a slotted spoon, carefully remove the pretzel sticks from the water, allowing excess liquid to drain, and transfer them to the prepared parchment-lined baking sheet, spacing them a couple of inches apart.
  8. Repeat the boiling and transferring process with the remaining dough and filling until all pretzel sticks are on the baking sheet.
  9. In a small bowl, lightly beat the egg with a splash of water to create an egg wash. Brush this egg wash generously over the tops of all the pretzel sticks. Immediately sprinkle them with coarse salt for that classic pretzel finish and extra flavor. Bake in the preheated oven for 15-18 minutes, or until the pretzel sticks are golden brown and have a beautifully dark, caramelized crust.
  10. While the pretzels are baking or cooling, prepare the taco guacamole. In a large bowl, mash the avocados until smooth or to your desired consistency. Stir in the sour cream, the remaining 3 tablespoons of taco seasoning, minced cilantro, and the juice from one lime. Mix until well combined. Taste and season with salt as needed.
