This Cranberry Orange Cheesecake is a showstopper – an orange scented cheesecake is filled with fresh cranberries, then topped with sweet sugared cranberries. It is so creamy and delicious – no one will believe that it’s homemade!

Ingredients

Crust

  • 1 1/2 cups butter cookie crumbs
  • 1/3 cup sugar
  • 6 tablespoons butter, melted

Filling:

  • 4 packages (8 oz each) cream cheese, softened
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 1/2 tablespoons orange zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh cranberries

Topping:

  • 2/3 cup sour cream
  • 1/3 cup sugar
  • 1/2 teaspoon orange zest

Sugared Cranberries

  • 1 cup water
  • 1 cup sugar
  • 1 cup fresh cranberries
  • 1/2 cup superfine sugar*

Instructions

  1. Place one oven rack in the center of the oven, with another rack below it. Preheat the oven to 375°F (190°C). If desired, line the bottom of a 9-inch springform pan with parchment paper. Place the pan on a larger baking sheet.
  2. In a bowl, combine the cookie crumbs, sugar, and melted butter. Stir until well mixed. Press the mixture firmly into the bottom and halfway up the sides of the springform pan. Use the bottom of a glass or a measuring cup to ensure the crumbs are tightly packed.
  3. Bake the crust for 7 minutes, then remove from the oven and allow to cool.
  4. In the bowl of a stand mixer fitted with the paddle attachment, beat the softened cream cheese until perfectly smooth. Gradually add the sugar and continue to beat on medium-high speed for 2 minutes, ensuring it’s fully incorporated. Add the eggs, one at a time, scraping down the sides of the bowl between each addition to ensure everything is well combined. Stir in the orange zest and vanilla extract, then gently fold in the fresh cranberries.
  5. Pour the cheesecake filling into the prepared springform pan. Place an oven-safe dish (like a ceramic baking dish or a metal pan) on the bottom rack in the oven. Carefully place the baking sheet with the cheesecake on it onto the top rack. Pour hot water into the dish on the bottom rack (this creates the humid environment to prevent cracks) and quickly close the oven door. Bake until the cheesecake is lightly golden on top and has just a slight jiggle in the center when gently shaken, approximately 50 minutes.
  6. While the cheesecake is baking, prepare the sour cream topping: In a small bowl, stir together the sour cream, sugar, and orange zest until smooth. Once the cheesecake has finished its initial bake, carefully remove it from the oven. Pour the sour cream mixture evenly over the top, spreading it to about 1/2 inch from the edges. Return the cheesecake to the oven and bake for an additional 5 minutes.
  7. After 5 minutes, turn off the oven and crack the oven door open slightly. Allow the cheesecake to cool completely in the oven for at least 1 hour before removing it. Once cool, cover the cheesecake with plastic wrap and transfer it to the refrigerator to chill completely, ideally for 6 hours or overnight.
  8. To prepare the sugared cranberries: Combine 1 cup of sugar and 1 cup of water in a small saucepan. Cook over medium heat, stirring until the sugar is completely dissolved, creating a simple syrup. Be careful not to let it boil vigorously; if it gets too hot, remove it from the heat and let it cool slightly. Add the fresh cranberries to the simple syrup (you want the syrup warm, not boiling hot, to prevent the cranberries from bursting). Pour the simple syrup and cranberries into a bowl, cover, and refrigerate overnight.
  9. The next day, drain the cranberries thoroughly, discarding the syrup. Place the superfine sugar (see notes for alternative) in a shallow bowl. Add the drained cranberries and gently shake the bowl to coat them evenly with the sugar. Transfer the sugared cranberries to a surface lined with waxed paper and allow them to dry for at least 1 hour to set the sugar coating.
  10. When you are ready to serve, carefully run a sharp knife around the inside edge of the springform pan to loosen the cheesecake. Gently release the outer ring of the pan. It effectively provides a humid baking environment, significantly reducing the risk of cracks without the direct hassle of a full water bath. This particular cheesecake did develop a small crack for me, but as you can see, the beautiful sugared cranberries effortlessly covered it, making it completely undetectable! Feel free to use a full water bath if you are comfortable and prefer that method for your cheesecakes.
