Total comfort food – this homemade Chicken a la King starts with an easy chicken gravy that is served over biscuits. This easy weeknight dinner can be on the table in 30 minutes!

Ingredients

  • 8 large biscuits* baked
  • 1 tablespoon olive oil
  • 8 oz fresh mushrooms
  • 1/4 cup butter
  • 1/3 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 1/4 cups milk
  • 12 oz cooked shredded chicken (can also use cubed)
  • 1 cup frozen sweet peas
  • 1 (2 oz) jar diced pimientos, drained
  • salt and pepper

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the mushrooms and cook until softened and browned. Remove to a plate and wipe the skillet clean.
  • Return the skillet to the stove and place over medium-low heat. Add the butter and melt. Add the flour and stir, cooking for about 1 minute. Slowly add the broth and the milk, whisking constantly. Continue to cook until the mixture boils and thickens. Once thickened, stir in the chicken, peas, mushrooms and pimientos.
