You might think that adding citrus flavor makes pancakes complicated, but these Lemon Pancakes are surprisingly straightforward to prepare. They follow the same easy principles as making your favorite traditional homemade pancakes, with just a few simple additions that elevate them to something truly special.   6. Finish Cooking and Serve: Cook the second side for another minute or two, or until it’s also golden brown and the pancake is cooked through. Remove the cooked pancakes from the griddle and place them on a plate. Repeat with the remaining batter. Serve immediately and prepare to enjoy!

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoon lemon zest
  • 1 1/2 cups milk
  • 1/2 cup fresh lemon juice
  • 2 eggs
  • 3 tablespoons unsalted butter melted and slightly cooled
  • 2 teaspoons vanilla extract
  • 1/4 cup granulated sugar

Instructions

  • Place the flour, baking powder, baking soda and salt in a large bowl. Whisk to combine thoroughly. Add the lemon zest and whisk it in, ensuring it’s evenly distributed.

  • In another bowl (or a large liquid measuring cup), combine the milk, fresh lemon juice, eggs, melted butter, and vanilla extract. Whisk until all ingredients are fully incorporated. Gently stir in the granulated sugar until dissolved.

  • Make a well in the center of the dry ingredients. Pour the prepared milk mixture into this well. Whisk gently, just until combined. Be careful not to overmix; a few small lumps are desirable, but ensure there are no large pockets of dry flour.
  • Heat an electric griddle or a large skillet over medium-high heat. If your cooking surface is not naturally nonstick, add a small amount of butter or use a nonstick cooking spray. Using a 1/3-cup measuring cup, pour the batter onto the hot surface, leaving space between each pancake. Cook until you see bubbles forming on the surface and the underside is golden brown. Flip the pancake over.
  • Continue to cook the second side for a few minutes until it is also golden brown and the pancake is cooked through.
  • Remove the cooked pancakes from the griddle and continue with the remaining batter. Serve immediately with Homemade Buttermilk Syrup.
