An easier – and healthier – version of a Mexican restaurant favorite dessert – Fried Ice Cream. Ice cream frozen with coconut and sweetened cornflakes is served with whipped cream, honey and a cherry.

Ingredients

  • 1 quart vanilla ice cream
  • 2 ½ cups Honey Nut Corn Flakes
  • ½ cup toasted sweetened coconut
  • 1 ½ teaspoons cinnamon
  • Honey whipped cream and maraschino cherries, for garnish

Instructions

  • Line a baking sheet with waxed paper or parchment paper. Using an ice cream scoop, portion out even scoops of vanilla ice cream and place them on the prepared baking sheet. For best results, ensure your scoops are as round and compact as possible. Freeze the scoops until they are completely solid, which will take at least 1 hour, or preferably 2-3 hours for extra firmness.
  • While the ice cream is freezing, prepare the crispy coating. Crush the Honey Nut Corn Flakes until they form semi-fine crumbs. You can achieve this by placing them in a resealable plastic bag and crushing them with a rolling pin, or by pulsing them briefly in a food processor.
