There’s something undeniably indulgent about a perfectly cooked egg nestled atop a velvety bed of creamy, seasoned spinach. It’s a combination that’s profoundly satisfying and utterly drool-worthy. Key Ingredients for Your Egg Pizza
Crafting the perfect Egg Pizza with Creamed Spinach requires a selection of fresh, high-quality ingredients. Here’s a breakdown of what you’ll need and why each component is essential:
- Butter: We recommend using unsalted butter for this recipe. This allows you to precisely control the seasoning of your creamed spinach, adding salt to taste without worrying about over-salting from the butter itself. It forms the base of our rich roux.
- Flour: All-purpose flour is key to creating a classic roux, which acts as a thickening agent for our creamy spinach sauce. It ensures a smooth, luscious texture that coats the spinach beautifully.
- Cream: For the ultimate thick and velvety creamed spinach, heavy whipping cream is the ideal choice. Its high fat content delivers unparalleled richness. While half-and-half can be used as an alternative, be aware that it may require a longer cooking time to achieve desired thickness and the final product might be slightly less creamy.
- Nutmeg: A pinch of freshly grated nutmeg is our secret ingredient for any white sauce. It doesn’t overpower the dish with a strong nutmeg flavor but rather adds a subtle, warming, and intriguing depth to the background notes, elevating the overall taste profile. Freshly grated nutmeg offers a superior aroma and flavor compared to powdered versions; if using powdered, use a very small amount.
- Salt and Pepper: These fundamental seasonings are crucial for bringing out the best in all the other ingredients. Season generously to your preference, as the spinach and cream base absorb flavors well.
- Spinach: You can use either regular or baby spinach. If opting for regular spinach, it’s advisable to remove any large, fibrous stems as they tend not to cook down as tenderly as the leaves. Fresh spinach wilts down significantly, so a full pound might seem like a lot, but it will reduce perfectly into the creamy base.
- Pizza Dough: The foundation of any great pizza! We highly recommend using a homemade pizza dough. It’s truly a game-changer for texture and flavor, providing a superior base compared to store-bought options. Our tried and true recipe promises a perfectly chewy and crispy crust.
- Cheese: Classic shredded mozzarella is a fantastic choice for its meltability and mild flavor, allowing the spinach and egg to shine. However, for a delightful twist, consider smoked gouda. Its smoky, slightly sweet notes would beautifully complement the creamed spinach and egg.
- Eggs: Large eggs are perfectly sized for these individual pizzas. They provide a substantial, rich yolk that, when cooked to runny perfection, becomes a luxurious sauce for the entire pizza.

Step-by-Step: Crafting Your Egg Pizza with Creamed Spinach
Follow these detailed steps to create your mouthwatering Egg Pizza with Creamed Spinach:
Step 1: Prepare the Roux. Begin by melting the butter in a large skillet over medium heat. Once the butter is fully melted and slightly shimmering, sprinkle in the flour. Whisk continuously for one to two minutes, allowing the flour to cook out its raw taste and form a smooth paste, which is your roux.
Step 2: Create the Cream Sauce. Slowly pour in the heavy cream while continuously whisking the mixture to prevent lumps. Continue whisking until the sauce begins to thicken to your desired consistency. Season this creamy base generously with freshly grated nutmeg, salt, and pepper to taste. Keep cooking until it reaches a rich, smooth, and slightly thick consistency.

Step 3: Incorporate the Spinach. Begin adding the fresh spinach to the cream sauce, one handful at a time. Stir each batch into the sauce until it just starts to wilt down. Adding it gradually ensures even cooking and allows the spinach to fully integrate without overcrowding the pan.
Step 4: Complete the Creamed Spinach. Continue adding the remaining spinach in batches until all of it has wilted completely into the creamy sauce. Stir well to ensure every leaf is coated, creating a vibrant and rich creamed spinach mixture.

Step 5: Prepare the Pizza Bases. Divide your pizza dough into four equal portions. On a lightly floured surface or using parchment paper for easy transfer, stretch or roll each portion into an individual-sized pizza crust. Aim for roughly 6 inches in diameter. If using parchment paper, you can comfortably fit two pizzas on each piece for baking.
Step 6: Top with Creamed Spinach. Evenly distribute the delicious creamed spinach mixture over each pizza base. Spread it out, leaving a small border of about 1/4 to 1/2 inch from the edges to create a crust.

Step 7: Add Cheese and Create an Egg Nest. Sprinkle a generous layer of your chosen cheese over the creamed spinach on each pizza. Then, gently press down on the center of the cheese, creating a small “nest” or indentation. This will provide a perfect spot for your egg to sit securely.
Step 8: Introduce the Eggs. Carefully transfer your topped pizzas to the preheated oven. Once inside, crack one large egg and gently pour it into the indentation you created on each pizza. This method is much simpler and less prone to spills than trying to transfer pizzas with raw eggs already on top.

Step 9: Bake to Perfection. Bake the pizzas until the crust is beautifully golden brown, the cheese is bubbly and melted, and the egg whites are set but the yolk is still wonderfully runny. This usually takes about 10-12 minutes. For that perfect runny yolk, keep in mind that radiant heat will continue to cook the egg even after the pizzas are out of the oven, so remove them slightly before they look completely done.

Expert Tips for the Perfect Egg Pizza
Achieving pizza perfection is all about technique and a few clever tricks. Here are some expert tips to ensure your Egg Pizza with Creamed Spinach turns out flawlessly every time:
- Embrace the Pizza Stone: For the crispiest crust and most evenly baked pizza, we wholeheartedly recommend using a pizza stone. These kitchen tools are surprisingly inexpensive and will last you a lifetime, making them a worthwhile investment for any pizza enthusiast. Remember to preheat your stone thoroughly in the oven (at least 30 minutes) before placing your pizzas on it.
- Mastering Homemade Dough: If you’re serious about pizza, our comprehensive homemade pizza dough post is your ultimate guide. It covers all the essential baking tips and tricks for creating a truly superior crust that will elevate any pizza, including this one.
- Adjusting Creamed Spinach Consistency: If your creamed spinach mixture appears too thick, or if the spinach isn’t incorporating smoothly, don’t hesitate to add an additional splash or two of heavy cream (or even milk) until it reaches your desired creamy consistency. This ensures easy spreading on the pizza.
- Cracking Eggs with Ease: To avoid any mess or accidental yolk breaks directly over your pizza, crack each egg into its own individual small bowl first. This method allows you to gently pour the egg onto the pizza’s indentation, ensuring a perfect placement every time.
- Final Seasoning Flourish: Just before serving, consider adding a final sprinkle of kosher salt and a generous grind of freshly cracked black pepper. These last-minute seasonings will enhance the flavors and add an extra layer of deliciousness to your freshly baked pizza.
- Serving Suggestions: These pizzas are undeniably best when served immediately, allowing you to enjoy the perfectly runny yolk and warm, crisp crust. While leftovers are certainly edible, be aware that reheating them will likely result in a more firmly set egg yolk.

Breakfast meets dinner with this Egg Pizza with Creamed Spinach which tops pizza dough with creamed spinach and a perfectly cooked egg.
Ingredients
- 1 tablespoon butter (unsalted preferred)
- 1 tablespoon all-purpose flour
- 2/3 cup heavy whipping cream
- Freshly grated nutmeg (a small pinch)
- Salt and pepper (to taste)
- 1 pound fresh spinach (baby or regular, stems removed if large)
- 1 pound pizza dough
- 4 ounces shredded Mozzarella cheese
- 4 large eggs
Instructions
- If using a pizza stone, place it in the oven. Preheat the oven to 475ºF. (For a pizza stone, ensure the oven preheats for at least 30 minutes to heat the stone thoroughly.)
- In a large skillet, melt the butter over medium heat. Add the flour and whisk for 1 minute to create a roux. Slowly add in the cream, whisking constantly until it thickens slightly. Season with a bit of freshly grated nutmeg, and salt and pepper to taste. Add the spinach, one handful at a time, stirring until each batch is wilted before adding more.
- Divide the pizza dough into 4 equal portions. Stretch or roll the dough into 4 individual sized pizzas, about 6 inches in diameter. Divide the creamed spinach between the 4 pizzas, spreading it to about 1/4 to 1/2 inch of the edges. Sprinkle each pizza with the mozzarella cheese. Gently press down the middles of the cheese to make a small indentation.
- Transfer the pizzas to the oven. (You may need to bake them 2 at a time, depending on the size of your pizza stone or baking sheet.) Crack an egg into a small bowl and gently pour it into the indentation on top of each pizza, repeating with all 4 eggs and 4 pizzas.
- Cook for 10-12 minutes, or until the crust is browned, the cheese is melted and bubbly, and the egg is set but the yolk remains runny. Remove from the oven slightly before the egg looks completely done, as residual heat will continue to cook it.
Recipe Notes:
- Baking capacity: You may need to bake 2 pizzas at a time, depending on the size of your pizza stone or baking sheet.
- Baking surface: If you do not have a baking stone, you can cook the pizzas on a standard baking sheet. You will not need to preheat the oven for as long.
- Egg cracking tip: Cracking the eggs into small individual bowls first, then gently pouring them onto the pizza, makes the process much easier and cleaner than trying to break an egg directly over the pizza.
