Ingredients

  • 1 1/2 cups heavy cream
  • 1/4 cup sugar
  • pinch of salt
  • 1 cinnamon stick
  • 4 egg yolks

Topping

  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions

  • In a medium saucepan over medium heat, combine the heavy cream, sugar, a pinch of salt, and the cinnamon stick. Stir the mixture gently and cook until it just begins to bubble around the edges. At this point, turn off the heat. Allow the mixture to sit and cool to room temperature for 15 to 30 minutes, allowing the cinnamon stick to infuse its flavor.
  • While the cream mixture cools, preheat your oven to 300°F (150°C). Prepare a water bath by bringing a kettle or a large pot of water to a boil. Place a damp kitchen towel at the bottom of a large baking dish. This towel will help stabilize the ramekins and insulate them, ensuring even cooking. Set the prepared baking dish aside.
