Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 pound large shrimp, peeled, deveined, tails removed, roughly chopped
  • 3/4 cup fresh corn kernels (from about 2 ears)
  • 1/4 cup mayonnaise
