Ingredients

Cake:

  • 1/2 cup vegetable oil, plus more for the pan
  • 1 2/3 cup all-purpose flour, plus more for the pan
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cup granulated sugar
  • 1/2 cup milk
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon red gel food coloring
  • 1 teaspoon blue gel food coloring
  • powdered sugar, for dusting

Frosting:

  • 1 1/2 cups 3 sticks unsalted butter, at room temperature
  • pinch of salt
  • 3 cups marshmallow creme
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups powdered sugar
  • 2-4 tablespoons milk

Instructions

  1. Preheat your oven to 350ºF (175ºC). Prepare a half sheet pan (approximately 18”x13”) by brushing its bottom and sides generously with vegetable oil. Line the pan with parchment paper, allowing an overhang on the longer sides to help with lifting. Brush the parchment paper with more vegetable oil, then evenly sprinkle flour over the entire oiled surface, tapping out any excess to ensure a light, even coating. This prep step is crucial for preventing the cake from sticking and making it easy to roll.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside. In a separate medium bowl, whisk together the 1/2 cup of vegetable oil, granulated sugar, milk, eggs, and pure vanilla extract until well combined and smooth. Gradually add the wet ingredients into the dry ingredients, mixing with a whisk just until the batter comes together and no dry streaks of flour remain. Be careful not to overmix.
  3. Divide the cake batter evenly into two separate bowls (you should have about 1 1/2 cups of batter in each). To one bowl, add the red gel food coloring and stir gently until the color is uniformly distributed. To the second bowl, add the blue gel food coloring and mix until you achieve a consistent blue hue. For easier application and less mess, you can transfer each colored batter into separate ziplock bags and snip off a corner. Alternatively, carefully pour the batters directly. Spread the red and blue batters in alternating stripes across the prepared sheet pan, aiming for three stripes of each color. Each stripe should be approximately 2 inches wide. Don’t worry about perfectly straight lines; the beauty is in the swirl!
  4. Bake in the preheated oven for about 15 minutes, or until the top of the cake springs back gently when lightly pressed with your finger. Immediately after removing from the oven, let the cake rest in the pan for 3 minutes. If needed, use a thin knife to gently loosen the edges of the cake from the pan. Liberally dust the entire top surface of the warm cake with powdered sugar. This prevents sticking to the towel. Place a clean, thin kitchen towel (avoid thick terry cloth, which can stick) over the sugared cake. Then, place a cooling rack on top of the towel. Carefully invert the cake onto the towel and cooling rack. Gently peel off the parchment paper. While still warm, carefully roll the cake up with the towel, starting from one of the longer ends. Roll it snugly but not too tightly. Allow the rolled cake to cool completely, which will take at least 1 1/2 hours. This crucial cooling step helps the cake set its rolled shape without cracking.
  5. While the cake cools, prepare the luscious marshmallow creme frosting. In the bowl of a stand mixer fitted with a paddle attachment, beat the softened unsalted butter and a pinch of salt on medium speed until the butter is light and creamy, about 1 minute. Add the marshmallow creme and pure vanilla extract, then continue beating for another 2-3 minutes until the mixture is light and fluffy. Gradually add the powdered sugar, mixing on low speed until combined, then increase to medium. Begin adding the milk, one tablespoon at a time, until the frosting reaches a smooth, spreadable consistency that is not too stiff and not too runny. You may not need all 4 tablespoons of milk.
  6. Once the cake is completely cool, gently unroll it from the towel. Carefully spread half of the prepared marshmallow creme frosting evenly over the entire surface of the cake, making sure to go all the way to the edges. Re-roll the cake, this time without the towel, maintaining a snug roll. Use a sharp knife to trim about 1/2 inch off both ends of the cake roll for a neat, finished appearance that showcases the vibrant swirl. Use the remaining frosting to generously frost the outside of the cake roll. For an extra festive touch, sprinkle with patriotic sprinkles before serving. Slice and serve chilled for the best texture and flavor.
