As I gathered the ingredients and began the preparation, I found myself quietly hoping that every step would go smoothly, ensuring that these precious components would culminate in a truly spectacular treat.

And lucky me – these cookies absolutely delivered! They were everything I hoped for and more, a testament to the quality of the recipe and the ingredients.

Salty and sweet, these Pecan Praline Thumbprints are pecan infused cookies topped with a sweet and salty pecan praline topping.

Ingredients

For the Cookies:

  • 1 1/2 cups (6 ounces) toasted, salted pecan pieces
  • 3/4 cup granulated sugar
  • 1 cup (8 oz) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon sea salt flakes

For the Praline:

  • 3/4 cup (6 ounces) unsalted butter, at room temperature
  • 1/2 cup maple syrup
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup firmly packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon sea salt flakes
  • 1/2 cup heavy cream
  • 1 1/4 cups (4.5 ounces) toasted, salted pecan pieces

Instructions

  1. Make the Cookies: Combine the pecans and 1/4 cup of the granulated sugar in a food processor. Process until fine crumbs form, being careful not to over-process to the point where the nuts release their oils and become pasty. Set this mixture aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat together the softened butter and the remaining 1/2 cup granulated sugar until the mixture is light, fluffy, and pale in color, which typically takes about 4 minutes. Beat in the vanilla extract, then use a spatula to scrape down the sides of the bowl to ensure everything is well combined.
  3. In a separate bowl, whisk together the all-purpose flour, kosher salt, and sea salt flakes. Add this dry ingredient mixture to the stand mixer, along with the reserved pecan/sugar mixture. Beat on low speed until the dough just comes together, usually around 30 seconds. Scrape down the sides and bottom of the bowl again and mix for another 10 seconds to ensure even incorporation.
  4. Lay a large piece of plastic wrap on your counter. Turn the dough out onto the plastic wrap. Work the dough together briefly with your hands, then pat it into an 8×8-inch square. Use a bench scraper to help square off the sides for a neat shape. Wrap the dough tightly in the plastic wrap and refrigerate for a minimum of 30 minutes, or up to 3 days. This chilling period helps the cookies hold their shape during baking.
  5. Preheat your oven to 350ºF (175ºC). Line three 13×18-inch baking sheets with parchment paper.
  6. Remove the chilled dough from the refrigerator. Cut the square dough into 6 even strips. Working with one strip at a time, roll the dough back and forth on the counter to form a smooth log. Cut each log into 8 equal pieces. As you cut, keep the log together and re-roll to maintain the cylindrical shape of each piece if needed. Place the dough pieces, cut side down, onto the prepared baking sheets, spacing them evenly. Aim for about 20 pieces per sheet. Use your thumb or the end of a mixing spoon to make an indentation in the center of each cookie.
  7. Bake one pan at a time. Place a baking sheet in the preheated oven and bake for 8 minutes. Remove the pan from the oven and use the end of a wooden spoon (or your thumb again) to gently tap down the indentation on each cookie, as it may have puffed up slightly. Rotate the baking sheet and return it to the oven for another 4 to 6 minutes, or until the edges of the cookies are set and a few slight cracks appear on top. The cookies should be lightly golden. Allow the cookies to cool completely on the baking sheet before handling. Repeat with the remaining cookie dough.
  8. While the cookies are baking, begin preparing the Praline: In a large, heavy-bottomed pot, melt the unsalted butter over medium heat. Add the maple syrup, light brown sugar, dark brown sugar, vanilla extract, kosher salt, and sea salt flakes. Stir well to combine all ingredients. Bring the mixture to a boil, then allow it to boil steadily for 3 minutes to thicken slightly. Pour in the heavy cream and stir to incorporate. Continue to cook the mixture, stirring occasionally, until it thickens enough to coat the back of a spoon. Finally, stir in the toasted pecan pieces.
  9. While the baked cookies are still warm (but cool enough to handle), use a small spoon to carefully fill each indentation with a generous amount of the warm praline mixture.
  10. Refrigerate the filled cookies for about 30 minutes to allow the praline to set properly.
