Crispy on the outside and creamy on the inside, these Cottage Cheese Pancakes are known as French toast pancakes in our house. This is a delicious way to change up your pancake mornings!

Ingredients

  • 4 eggs
  • 1 1/2 cups cottage cheese
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter

Instructions

  1. Crack the eggs into a large bowl. Whisk the eggs well until they are thoroughly broken up and combined.
  2. Add the cottage cheese, flour, sugar, vanilla extract, baking powder, and salt to the bowl with the eggs. Gently mix everything together until just combined. The batter will be thinner than regular pancake batter.
