  • 2 lbs russet potatoes (about 2-3 potatoes)
  • 3 tablespoons extra virgin olive oil divided
  • 1 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
