With layers of flavor, this easy to assemble Chicken Tortilla Stack is great for a weeknight meal, or even for company.

Ingredients

  • 8 oz sour cream
  • 1 tablespoon hot sauce
  • 1/2 teaspoon seasoned salt
  • 1 cup grated Cheddar cheese
  • 1 cup grated Monterey Jack cheese
  • 1 cup grated Mozzarella cheese
  • 2 tablespoon vegetable oil
  • 5 9- inch flour tortillas
  • 2 1/2 cups cooked, shredded chicken
  • 6 green onions (sliced)
  • shredded lettuce, diced tomatoes, diced avocado, additional sour cream – for serving

Instructions

  • Preheat the oven to 400F (200C). Spray a 9-inch springform pan with nonstick cooking spray. This will ensure your stack releases easily.
  • In a small bowl, combine the sour cream, hot sauce, and seasoned salt. Stir until well combined and smooth. This creates your flavorful base spread.
  • In another bowl, combine all three cheeses: Cheddar, Monterey Jack, and Mozzarella. This blend offers a perfect melty, gooey consistency.
  • In a large skillet over medium-high heat, heat 1 tablespoon of the vegetable oil. Working with one tortilla at a time, add it to the hot oil to crisp up slightly. Flip it over when the first side gets lightly brown and slightly firm. This step adds texture and prevents the stack from becoming soggy. Continue with the remaining tortillas, adding more oil if needed.
  • To assemble the stack, place 1 of the crisped tortillas on the bottom of the prepared springform pan. Spread on ⅕ of the sour cream mixture, followed by ¼ of the shredded chicken, 2 tablespoons of sliced green onion, and ⅕ of the mixed cheese. Add another tortilla, and repeat the layers of sour cream mixture, chicken, green onions, and cheese. Continue this layering process 2 more times, ensuring you use all the chicken. Finally, lay the remaining tortilla on top. Spread this top tortilla with the final portion of the sour cream mixture and top generously with the remaining cheese. Cover the pan loosely with aluminum foil.
  • Bake in the preheated oven for approximately 25-30 minutes, or until the cheese is beautifully melted and bubbly, and the entire stack is heated through. Carefully remove the stack from the oven and let it rest for 10 minutes before slicing. This resting period allows the layers to set, making for much easier and cleaner slices. Once rested, remove the springform pan sides. Top with the remaining green onions, fresh shredded lettuce, diced tomatoes, creamy diced avocados, and additional sour cream, if desired, before serving.
