Easy Corn and Sausage Chowder – warm, comforting, filling and perfect for a cold day! This easy soup only takes a few ingredients and can be on the table in 40 minutes.

Ingredients

  • 1 pound sweet Italian sausage casings removed, if needed
  • 1 medium onion chopped
  • 1 1/2 pounds potatoes peeled and cut into 1/2-inch cubes
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (15.25 oz) can whole kernel corn, drained
  • 1 (14.75 oz) can cream-style corn
  • 1 (12 oz) can evaporated milk
  • Chopped chives

Instructions

  1. In a large Dutch oven over medium-high heat, cook the sausage and the onion until the sausage is browned and the onions are tender. Drain well.
  2. Stir in the potatoes, chicken broth, salt and pepper. Bring to a boil, then cover the pot and reduce the heat. Simmer for 10-15 minutes, or until the potatoes are tender.
  3. Stir in the whole kernel corn, cream-style corn and evaporated milk. Cook until warmed through.
  4. Top with chopped chives to serve.
