- 3 tablespoons fresh lime juice
- 2 large egg yolks
- 2 cups cold water
- 1 teaspoon freshly grated lime zest
- 1 cup white chocolate chips (or 6 oz chopped white chocolate bar)
- 1 (8 oz) package full-fat cream cheese, softened to room temperature
- 6 tablespoons sour cream
Whipped Cream Topping
- 1/2 cup heavy whipping cream, very cold
- 2 teaspoons powdered sugar

- Preheat your oven to 450ºF (230ºC). Roll out the pie crust and carefully press it into a 9-inch pie dish. Spread this mixture evenly onto a small baking sheet. Bake in the preheated 425ºF (220ºC) oven for 4 to 8 minutes, stirring every minute, until the streusel is a light golden brown and fragrant. Gradually whisk in the 2 cups of cold water until smooth. Place the saucepan over medium heat and cook, stirring constantly with a whisk, until the mixture comes to a full boil. - In a separate small, heatproof bowl, place the 1 cup of white chocolate chips. Pour 1/2 cup of the hot pudding mixture over the white chocolate chips. Stir gently until the white chocolate chips have completely melted and are incorporated, forming a smooth, glossy mixture.1 cup white chocolate chips
- In a clean mixing bowl, beat the softened 8 oz package of cream cheese with an electric mixer until it is light and fluffy, about 2-3 minutes. Add the warm white chocolate chip mixture to the cream cheese and continue to beat until the mixture is smooth and fully combined. - Stir the 6 tablespoons of sour cream into the remaining plain lemon pudding mixture until fully incorporated. Gently spread this sour cream-lemon pudding mixture over the cream cheese layer in the pie crust, creating a smooth top. Cover the pie loosely with a piece of plastic wrap, ensuring the wrap doesn’t touch the filling directly.
