Ingredients

  • 3 medium sweet potatoes peeled and cubed
  • 1 large bell pepper cubed
  • 1 onion diced
  • 3 lbs boneless skinless chicken breast, cubed
  • 2 15 oz cans tomato sauce
  • 4 tablespoons brown sugar
  • 4 tablespoons worcestershire sauce
  • 2 tablespoons mustard powder
  • 4 cloves minced garlic
  • fresh cilantro for serving
  • prepared rice for serving

Instructions

  • In a large bowl, combine all ingredients and mix well. Transfer to 2-4 freezer safe bags, label and freeze.
  • When time to cook, dump contents of one bag into a slow cooker and cook on low for 6-8 hours. If not frozen, reduce cook time by 1-2 hours. Top with chopped cilantro and serve over rice.
