Looking for a full flavored lunch to keep you going? These Spicy Cajun Cheesesteak Sandwiches are spicy and flavorful and are easy and fast enough to make for lunch!

Ingredients

  • 1 lb flank steak (skirt steak can also be used)
  • 1 1/2 tablespoons Cajun Seasoning
  • 4 French sandwich rolls
  • 2 teaspoons light flavored olive oil
  • 1 tablespoon butter
  • 1 cup shredded pepper jack cheese

Instructions

  1. Place an oven rack 6 inches from the top of the oven. Preheat the oven to 400ºF.
  2. Slice the steak thinly against the grain. Place the steak in a medium bowl and sprinkle with the Cajun seasoning. Stir to coat the steak pieces evenly with the seasoning.
  3. Heat a heavy stainless steel skillet over medium-high heat and add 1 teaspoon of the oil. Swirl to coat the pan. Add half of the meat slices and arrange them in a single layer in the pan. Cook for 1 minute, then flip them over and cook for an additional minute. If any piece is not sufficiently browned, allow it to cook for an extra 20 to 30 seconds. The goal is for each piece to be nicely browned while remaining juicy in the center.
  4. Use a spatula or tongs to transfer the cooked beef from the skillet to a plate. Repeat the process with the remaining 1 teaspoon of oil and the second half of the seasoned meat.
  5. Once all the meat has finished cooking, add the butter to the skillet. As the butter melts, gently scrape up any browned bits that have accumulated on the bottom of the pan, incorporating them into the butter. Drizzle this flavorful butter and pan juices over the steak bites on the plate.
  6. Arrange the French sandwich rolls, cut side up, on a baking sheet. Divide the cooked steak evenly onto the bottom halves of the rolls. Generously sprinkle the shredded pepper jack cheese over the steak. Place the baking sheet in the preheated oven and bake until the cheese is melted and gooey, and the rolls are lightly toasted, typically 3 to 4 minutes. Be sure to keep a close eye on them, as they can toast quickly.
  7. Carefully place the top halves of the rolls onto the assembled sandwiches and serve immediately for the best experience.
