Ingredients

Bread

  • 1/2 cup butter softened
  • 1 cup sugar
  • 4 ounces cream cheese softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 tablespoon red food coloring

Filling

  • 4 oz cream cheese softened
  • 1/4 cup sugar
  • 1 egg
  • 1 tablespoon flour
  • 1/2 tablespoon milk

Instructions

  • Preheat the oven to 350ºF (175ºC). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  • In a large bowl, or the bowl of a stand mixer fitted with the paddle attachment, cream together the softened butter, sugar, and 4 ounces of softened cream cheese until the mixture is light and fluffy. Add in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed. Stir in the vanilla extract until just combined.

  • In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In another small bowl or liquid measuring cup, combine the buttermilk and red food coloring. Stir until the food coloring is fully incorporated.
    2 cups flour, 1 tablespoon unsweetened cocoa powder, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1/2 cup buttermilk, 1 tablespoon red food coloring
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture. Begin by beating in one-third of the flour mixture, followed by half of the buttermilk mixture. Continue by adding another one-third of the flour, then the remaining buttermilk, and finally the remaining flour. Beat the batter just until all ingredients are combined and no dry streaks remain. Be careful not to overmix.
  • For the cream cheese filling, in a separate medium bowl, beat the remaining 4 ounces of softened cream cheese and 1/4 cup sugar until light and fluffy. Beat in the egg, 1 tablespoon flour, and 1/2 tablespoon milk until the mixture is completely smooth and creamy.

  • Pour half of the red velvet batter into the prepared loaf pan. Carefully dollop the cream cheese filling over the red velvet batter, spreading it as evenly as possible. Gently spoon the remaining red velvet batter over the cream cheese layer and spread it out carefully to cover the filling.
  • Bake in the preheated oven for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of the bread comes out clean. If the top browns too quickly, you can tent it loosely with aluminum foil. Let the quick bread cool completely in the pan on a wire rack before slicing and serving.

*It’s crucial to ensure your loaf pan is indeed a 9×5-inch pan. Many commercially available loaf pans are actually smaller, which may cause the batter to overflow during baking. If your pan is smaller, simply ensure you do not fill it more than two-thirds full to prevent spillage.
