Elevate Your Taco Tuesday with Irresistible Chicken Club Tacos
There are some lessons we aim to instill in our children from a young age: the importance of stranger danger, the hazards of electrical outlets, and the simple courtesy of “please” and “thank you.” But in my household, there’s another fundamental truth we embrace with open arms: every Tuesday should unequivocally be a Taco Tuesday.
While I admit that sometimes life gets in the way and our taco nights might shift to a Wednesday or a Friday (because, let’s be honest, tacos are always a good idea, any day of the week!), my daughter’s unwavering dedication to this culinary tradition is truly heartwarming. Without fail, as soon as Tuesday morning dawns, she’ll ask, “Is it Taco Tuesday?” Just last night, as we were indeed enjoying tacos on a Tuesday, she exclaimed, “I didn’t even realize it was Tuesday! But of course, it is – it’s Taco Tuesday!” Her logic is impeccable, and her enthusiasm infectious. It’s safe to say she’s a connoisseur of joyful dining experiences.

For me, tacos are one of those rare foods I never tire of. Their versatility and endless flavor combinations make them a constant source of culinary inspiration. So, when Taco Tuesday rolls around, I’m always eager to participate, especially when it involves exciting new variations like these Chicken Club Tacos. While classic ground beef tacos remain a staple in our rotation, I thrive on experimenting with fresh, inventive recipes that keep mealtime anything but mundane.
The Inspiration: From California Club Wraps to Chicken Club Tacos
A little while ago, I found myself reminiscing about a truly exceptional recipe from my archives: these incredible California Club Chicken Wraps. They were, and still are, absolutely delicious, packed with vibrant flavors and satisfying textures. As I thought about how much we loved them, a creative spark ignited: what if I could capture those amazing club sandwich flavors and transform them into an exciting new taco experience? The idea of Chicken Club Tacos instantly came to mind, promising a fresh and exciting take on our favorite handheld meal.

Unpacking the Flavors: What Makes These Chicken Club Tacos Special?
These Chicken Club Tacos are a symphony of textures and tastes, carefully balanced to create an unforgettable meal. The core components are reminiscent of a traditional club sandwich, but with a vibrant, fresh twist:
- Perfectly Cooked Chicken: We start with tender, boneless, skinless chicken thighs, seasoned and pan-seared to a beautiful golden brown before finishing in the oven. This method ensures juicy, flavorful chicken every time. Once cooked, the chicken is easily shredded and then tossed with a hint of ranch seasoning, infusing it with that classic club sandwich essence.
- Crisp Lettuce and Ripe Tomatoes: These provide the essential fresh crunch and juicy sweetness, echoing the refreshing elements of a classic sandwich.
- Smoky Bacon: Because what’s a club without bacon? Crispy, savory bacon bits add a crucial layer of flavor and a delightful textural contrast that complements the chicken perfectly.
- Creamy Avocados from Mexico: Slices of rich, creamy Avocados from Mexico are a non-negotiable addition. Their buttery texture and mild flavor provide a perfect counterpoint to the other ingredients, adding a layer of indulgence and healthy fats. Always look for Avocados from Mexico at your local grocery store for consistent quality and taste!
- The Unexpected Twist: Diced Mango: Here’s where we truly throw caution to the wind and elevate the flavor profile. Just like in those delicious California Club Chicken Wraps, a sprinkle of diced mango adds a surprising burst of sweet and tangy freshness. This tropical fruit beautifully balances the savory and creamy elements, making each bite an exciting journey for your taste buds.
- Homemade Ranch Drizzle: Tying all these incredible ingredients together is an easy, homemade ranch dressing. This creamy, herby sauce adds a cooling, zesty finish that perfectly complements the savory chicken, crisp vegetables, and sweet mango. It’s the secret weapon that truly makes these tacos sing.

More Than Just Taco Tuesday: Perfect for Any Occasion
While these Chicken Club Tacos are an obvious choice for a fun and flavorful Taco Tuesday, their appeal extends far beyond a single day of the week. They’re incredibly versatile and perfect for a variety of occasions:
- Effortless Weeknight Dinners: The recipe is straightforward, making it an excellent option for busy weeknights when you want a homemade meal without spending hours in the kitchen.
- Impressive Entertaining: Hosting friends or family? These tacos offer a gourmet touch while still being approachable and fun. Set up a taco bar with all the fixings, and let guests build their own culinary masterpieces.
- The Ultimate Game Day Food: These Chicken Club Tacos truly shine as game day fare. Their fresh flavors and satisfying ingredients make them a crowd-pleaser for any sports gathering. They’re easy to assemble, hold up well, and offer a delicious alternative to typical game day snacks. Imagine your guests enjoying these vibrant tacos while cheering on their favorite team – a guaranteed win!
When it comes to serving, especially for game day or if you have little ones like my daughter who prefer hard shells, I wholeheartedly recommend Old El Paso™ Stand ‘N Stuff™ taco shells. These innovative shells are a game-changer! Not only do they stand on their own, making them incredibly easy to fill without frustrating spills, but their unique shape also allows for a generous amount of filling. This is crucial when you have so many delicious components like our chicken, bacon, avocado, tomato, and mango that need to go into each taco. For parties, these shells make assembly a breeze – you can prep a whole batch of tacos standing upright, ready for your guests to grab and enjoy without the usual mess and struggle.
And, as mentioned before, never forget the vibrant, creamy goodness of Avocados from Mexico. They are consistently perfect for adding that smooth, rich texture and essential flavor to these, and countless other, recipes.

Chicken Club Tacos
Pin
Ingredients
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup buttermilk
- 1/2 tablespoon fresh chopped chives
- 1/2 tablespoon fresh chopped dill
- 1/2 tablespoon fresh chopped parsley
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1.25 pounds boneless, skinless chicken thighs
- 1 tablespoon extra virgin olive oil
- 1/2 tablespoon ranch seasoning (optional)
- 1 package (4.7 oz) Old El Paso™ Stand ’N Stuff™ taco shells
- 2 Avocados from Mexico, sliced
- 4 slices bacon, cooked and chopped
- Chopped tomato
- Chopped mango
Instructions
- Prepare the Homemade Ranch: In a medium bowl, combine the sour cream, mayonnaise, buttermilk, fresh chopped chives, dill, parsley, onion powder, and garlic powder. Stir until well combined. Season generously with salt and pepper to taste. Cover the bowl and refrigerate the ranch dressing until ready to use, allowing the flavors to meld.
- Preheat Oven: Preheat your oven to 375ºF (190ºC).
- Season Chicken: Pat the boneless, skinless chicken thighs dry with paper towels. Sprinkle both sides generously with salt and pepper.
- Cook and Shred Chicken: Heat the extra virgin olive oil in a large oven-proof skillet or Dutch oven over high heat. Once shimmering, add the seasoned chicken thighs to the hot skillet and cook until beautifully browned on both sides, about 2 minutes per side. After browning, cover the skillet with a lid or foil and transfer it to the preheated oven. Bake for approximately 18 minutes, or until the chicken is thoroughly cooked through and reaches an internal temperature of 165ºF (74ºC). Carefully remove the skillet from the oven and let the chicken rest for about 5 minutes. Using two forks, shred the cooked chicken directly in the pan. Stir in the optional ranch seasoning for an extra layer of flavor.
- Assemble the Tacos: Warm the Old El Paso™ Stand ’N Stuff™ taco shells according to package directions. Spoon the shredded, ranch-seasoned chicken into the warmed taco shells. Arrange slices of fresh Avocados from Mexico over the chicken. Top generously with the chopped bacon, diced tomato, and the refreshing chopped mango. Finally, drizzle a generous amount of your homemade ranch dressing over all the ingredients. Serve immediately and enjoy!
