- 1/2 cup creamy peanut butter
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/2 cups chocolate baking discs or chocolate chunks
- 1/2 cup cinnamon sugar for rolling
Instructions
- Preheat the oven to 350ºF. Line baking sheets with parchment paper or Silpat liners.
- In a bowl, whisk together the flour, baking powder, baking soda and salt.1 1/4 cups all-purpose flour,

1/2 teaspoon salt - In the bowl of a stand mixer, combine the butter, brown sugar and granulated sugar. Mix on medium-high speed 1 to 2 minutes, until it is creamy. Beat in the peanut butter until smooth. Add the egg and vanilla and beat for 30 seconds.1/2 cup unsalted butter, softened,
1/2 cup brown sugar,

1/2 teaspoon vanilla - Slowly add the dry ingredients to the wet ingredients while the mixer is on low. Mix just until combined.
- Scoop a tablespoon of the dough into your hand and then flatten it out. Place 2 chocolate discs on top, then fold the dough over the chocolate, then roll into a ball, enclosing the chocolate in the center. Roll the ball in the cinnamon sugar and then place on the prepared baking sheet.1 1/2 cups chocolate baking discs or chocolate chunks,
1/2 cup cinnamon sugar - Bake for 8 to 10 minutes then remove from the oven. Serve warm.
