Ingredients

Crust

  • 2 cups crushed graham crackers
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup sugar
  • 1 tablespoon ground cinnamon

Pumpkin Filling

  • 3 (8-ounce) packages cream cheese, at room temperature
  • 1 1/3 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 (15-ounce) can pure pumpkin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger

Praline Topping

  • 1 cup pecans
  • 1/2 cup firmly packed brown sugar
  • 3/4 cup heavy whipping cream
  • 1 tablespoon unsalted butter
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. To make the crust: Line the bottom of a 9- or 10-inch springform pan with parchment paper and coat with cooking spray or Baker’s Joy. In a large bowl, stir together the crushed graham crackers with the melted butter, sugar, and cinnamon. Press firmly into the bottom of the prepared pan.
  2. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  3. To make the filling: Using a mixer fitted with a paddle attachment, beat the cream cheese in a large bowl on medium-high speed for about 1 minute, until light and fluffy. Gradually add the sugar and beat until the mixture is smooth, approximately 1 minute. Add the eggs one at a time, beating on medium-high for 20 seconds after each addition to ensure they are fully incorporated. Stir in the vanilla, pure pumpkin, cinnamon, nutmeg, and ginger; continue to beat on medium speed for about 1 minute, until all ingredients are well combined and the mixture is uniform.
  4. Pour the pumpkin filling over the prepared crust. Place the springform pan into a larger baking pan. Set this larger pan on the center rack of the oven. Carefully pour enough boiling water into the larger pan to reach halfway up the sides of the springform pan, creating a water bath. Bake for approximately 1 hour, or until the filling is set and the top has turned a beautiful golden brown. Remove the cheesecake from the water bath and allow it to cool completely on a wire rack for about 30 minutes. Once cooled, chill the cheesecake in the refrigerator for several hours, or preferably overnight, to allow it to firm up and flavors to meld. Once thoroughly chilled, remove the cheesecake from the springform pan and carefully transfer it to a serving plate.
  5. To make the praline topping: Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Spread the pecans in a single layer on a baking sheet. Toast them in the preheated oven for 7 to 9 minutes, until they are golden brown and wonderfully aromatic. Once toasted, coarsely chop the nuts.
  6. In a saucepan set over medium heat, stir together the brown sugar, heavy whipping cream, and butter. Bring the mixture to a boil and let it boil for about 1 1/2 minutes, adjusting the heat as necessary to prevent it from boiling over. Do not stir the mixture during this boiling process. Remove the pan from the heat and stir in the vanilla extract, salt, and the chopped toasted pecans. Allow the praline topping to cool for at least 15 minutes before gently pouring it over the top of the chilled cheesecake. Serve immediately to enjoy its delightful texture, or cover and chill the cheesecake until you are ready to serve. The cheesecake will keep, when well wrapped, in the refrigerator for 3 to 4 days, remaining fresh and delicious.
