The Secret Ingredient: Discovering Frank’s RedHot Sweet Chili Sauce

It’s hardly a secret to anyone who knows me: I am an ardent admirer of Frank’s RedHot sauce. My refrigerator door consistently hosts a bottle of this iconic hot sauce, a versatile condiment I rely on to infuse warmth and depth into countless dishes. From adding a spicy kick to my chili and enhancing the flavor of my morning eggs, to, of course, creating any number of “buffalo” inspired culinary delights, Frank’s RedHot is a staple. Given my deep appreciation for the brand, it was only natural that I eagerly embraced the opportunity to explore Rachel Rappaport’s latest culinary masterpiece, Cooking with Frank’s RedHot Cayenne Pepper Sauce. This cookbook isn’t just a collection of recipes; it’s a testament to the boundless versatility of Frank’s RedHot.

The cookbook itself is a revelation, boasting 65 recipes that cleverly demonstrate how Frank’s RedHot can transform dishes across the entire meal spectrum, from hearty breakfasts to surprisingly innovative desserts. As someone with a particular fondness for appetizers, I was immediately drawn to the numerous tantalizing starters featured. However, I was truly captivated by how far beyond appetizers the book ventured. Six distinct dessert recipes, for instance, challenged my preconceived notions of sweet and spicy pairings, offering a unique and unexpectedly delightful fusion that left me eager to experiment further. This adventurous spirit is what makes the cookbook such a fantastic resource for anyone looking to expand their flavor palette.

My initial dive into the cookbook revealed several impressive aspects that contributed to its overall appeal:

  • Visual Feast: While not every single finished dish is accompanied by a photograph, the book features a stunning full-page image for approximately every second or third recipe. These high-quality photos serve as wonderful visual guides and powerful sources of inspiration, making it easier to visualize the final result.
  • Accessible Difficulty Levels: The recipes generally fall within the easy to medium difficulty range, making them approachable for cooks of all experience levels. Many instructions are remarkably simple and straightforward to follow. Even dishes that might initially seem a little intimidating, such as the Hot Ranch Fried Chicken or the Cinnamon Cayenne Buns, are explained with clarity, encouraging readers to give them a try.
  • Readily Available Ingredients: A major plus for any home cook, the vast majority of ingredients called for in the recipes are easy to find. Most can be sourced from a standard grocery store, or are likely already stocked in your pantry, eliminating the need for specialized shopping trips.

Beyond the phenomenal Sweet Thai Chicken Wings, which we’ll delve into shortly, the cookbook has introduced me to a world of other intriguing recipes that are high on my list to try:

  • Buffalo Chicken Burgers
  • Red Hot Sopes with Slow Cooker Carnitas
  • Game Day Popcorn Munch
  • Parmesan Sweet Potatoes
  • Sugar and Spice (and Everything Nice) Peach Crumble

Crafting the Perfect Baked Sweet Thai Chicken Wings

With such an exciting array of dishes presented in the cookbook, choosing where to begin was a delightful challenge. Ultimately, I settled on a classic chicken wing preparation, but with an enticing, exotic twist. This particular recipe served as my very first introduction to Frank’s RedHot Sweet Chili Sauce – and honestly, I’m still wondering how I managed to live without it for so long! Its exceptional blend of distinct sweetness, savory depth, and a subtle, satisfying heat captivated me instantly. The cookbook features several recipes that highlight this fantastic chili sauce, and after experiencing the incredible flavor it brought to these baked wings, I am genuinely eager to try every single one of them.

The Magic of the Marinade: Unexpected Flavor, Unforgettable Taste

These Sweet Thai Chicken Wings truly deliver an astonishing depth of flavor that genuinely took me by surprise. My initial skepticism stemmed from the quick marinating process; the wings are only left to soak in the flavorful mixture for a mere 30 minutes, and then the sauce is drained off before baking. I harbored a slight fear that without continuous basting during cooking, the wings might emerge from the oven bland or lacking the vibrant Thai-inspired taste I was so eagerly anticipating. My worries, however, proved to be completely unfounded.

The short yet incredibly effective marinade works its magic, infusing an impressive amount of flavor directly into the chicken meat. Every single bite of these perfectly baked chicken wings bursts with a harmonious balance of sweet, tangy, and subtly spicy notes. This incredible flavor profile is achieved through the masterful combination of Frank’s Sweet Chili Sauce, rich soy sauce, bright rice vinegar, aromatic fresh ginger, pungent garlic, and a touch of spicy mustard. My daughter, a self-proclaimed connoisseur of chicken wings, couldn’t get enough of these, reaching for one after another, and I was right there with her! While I personally enjoyed dipping my wings in a little extra sweet chili sauce for an added layer of indulgence, my husband and daughter found them absolutely perfect straight out of the oven, highlighting their versatility and universal appeal.

These Sweet Thai Chicken Wings feature chicken wings marinated in a vibrant, quick mixture of Thai-inspired flavors and then baked to a perfect crispness. An ideal appetizer for any occasion!

Ingredients

  • 24 chicken wings, separated into flats and drums
  • 1 cup Frank’s® RedHot® Sweet Chili Sauce
  • 1 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon fresh grated ginger
  • 2 tablespoons fresh grated garlic
  • 1 tablespoon spicy mustard
  • Freshly ground pepper, to taste
  • 1 tablespoon vegetable oil

Instructions

  1. Place the separated chicken wings in a large resealable bag or a shallow dish.
  2. In a medium bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, grated ginger, grated garlic, and spicy mustard. Season the mixture with freshly ground pepper to your taste. Pour this vibrant marinade into the bag with the chicken wings, ensuring all wings are thoroughly coated. Seal the bag (or cover the dish) and refrigerate for at least 30 minutes. For an even deeper flavor, you can marinate for up to 2 hours, turning the bag or tossing the wings halfway through to ensure even absorption.
  3. While the wings are marinating, preheat your oven to 400ºF (200ºC). Line a large baking sheet with foil for effortless cleanup and lightly spray it with nonstick cooking spray. For extra crispiness, consider placing a wire rack on top of the foil-lined baking sheet.
  4. After the marinating time, drain the chicken wings thoroughly in a colander, discarding all excess marinade. Transfer the drained wings to a clean bowl, add the vegetable oil, and toss gently to ensure each wing is lightly coated. Arrange the wings in a single layer on the prepared baking sheet (or wire rack), making sure they are not overcrowded. Overcrowding can steam the wings instead of crisping them.
  5. Bake the wings for approximately 40 minutes, or until they are fully cooked through, beautifully golden brown, and the skin is starting to crisp. For an extra crispy finish, carefully turn the oven to broil during the last 1-2 minutes of cooking. Keep a very close eye on them during this stage to prevent burning, as broiler heat can be intense.
  6. Remove from oven and serve immediately. Garnish with sesame seeds or chopped green onions if desired.

Tips for Crispier Wings: For truly crispy baked wings, ensure they are patted very dry with paper towels before marinating. After draining the marinade, tossing them with a little vegetable oil (as instructed) and arranging them in a single layer on a wire rack set over a foil-lined baking sheet will greatly improve air circulation, resulting in an even crispier exterior.

Serving Suggestions: These Sweet Thai Chicken Wings are incredibly flavorful on their own, but can be enhanced with a side of extra Frank’s RedHot Sweet Chili Sauce for dipping. A squeeze of fresh lime juice just before serving can also add a bright, zesty counterpoint to the sweetness. They pair wonderfully with a simple white rice or a refreshing cucumber salad.

Make Ahead: While a 30-minute marinade yields delicious results, you can prepare the wings and marinate them for up to 2 hours in the refrigerator to allow the flavors to deepen even further without making the chicken tough.

Wing Preparation: If your chicken wings are whole, you’ll need to separate them into “flats” (the middle section) and “drums” (the meaty section resembling a small drumstick). Discard the wing tips or save them for making chicken stock.
